How big a turkey, and when to thaw it

Whoever claims the turkey slot needs these two numbers:

Thanksgiving potluck timeline

  • 3 weeks before: send the sign-up link so people can plan and shop
  • 2 weeks before: confirm who has the turkey, and ask directly for anything still open
  • Week of: turkey goes into the fridge to thaw (see the chart above)
  • 2 days before: the automatic reminder goes out with each person's dish and arrival time
  • Day of: hot dishes arrive in the last hour; put food away within two hours of serving

A home oven fits the turkey or three casseroles, not both. Ask on the sign-up whether each dish arrives hot, needs reheating, or is served cold, and plan around it: slow cookers for mashed potatoes and stuffing, the oven for anything that must crisp, and cold dishes like salad, cranberry sauce, and pie need no heat at all.

Running a work Thanksgiving potluck

  • Hold it the Tuesday or Wednesday before, since many people take Thursday and Friday off
